Get your smoker rolling at 225˚ - 250˚ or set up your ceramic grill for indirect cooking at same temp. Use some pecan wood if you got it!

Get those wings/thighs on the cooker and don’t bother them for at least 1 1/2 hours. At that time you should give it all a flip. then cook for another 1-2 hours til the skin is gorgeous.
Eat ‘em up -- A dab of honey or cane syrup is a nice finishing touch!
