Thunderbird was established in the Spring of 2012 and by then Trace Scarborough had been a Big Green Egg evangelist for nearly 12 years. During that time, he rambled all over the southeast following his football team, tailgating with the Egg. He made it to all of the SEC football venues with his ceramic smoker, cooking up some good eats for his friends and family.

The tailgating menu included shrimp burgers, shrimp diablos, fajita shrimp skewers and not JUST things made with shrimp, but coffee-crusted pork tenderloin, mexican-stuffed chicken breasts, Santa Maria tri-tip and chicken wings, to name a few.

As the wings became a favorite at these gatherings, he was told more and more that he should open a place and sell them.

In 2012 he decided to make his chicken wings available to Nashville. These days, Thunder Wings and Thunder Thighs are smoked on a bigger smoker than the Egg due to capacity, but the taste hasn't changed. We hope you always enjoy your Thunderbird and appreciate you spreading the word!
